Quinta de S. Francisco Late Harvest
The portion where the Sauvignon Blanc (70%) and Fernão Pires (30%) grape varieties are installed for the production of this wine, has excellent soil and climatic conditions for the production of this type of wine. Located at the confluence of two rivers, and protected by the “slopes” of the banks of the same, it produces during the night the production of high humidity level in the grapes, and during the day a “greenhouse” effect derived to the protection of the wind. Excellent conditions for the development of the fungus Botrytis Cinerea.
Fresh berries were harvested at different locations in the plot to perform physical chemical analyzes and organoleptic tests to mark the grape harvest. On October 20, the grape harvest was done manually by a team of specialized people, where only grapes that showed symptoms caused by noble rot were harvested.
After stopping alcoholic fermentation and wine stabilization, 40% aged for about two years in used French oak casks, and then bottled.
It has a golden color and intense aromas of dried fruits and honey with light tangerine notes. In the test there is an excellent balance between sugars and acidity. It has a long and elegant finale.
As for the best gastronomic combinations: Excellent as an aperitif or accompanying “foie gras” buttery, sweet and cold cheeses.
