This wine symbolizes joy, celebration, great food, good friends, and the good life. A wine of pure pleasure, elegant and expressing the true essence of traditional Dão wine. IMPECÁVEL is made 100% from the region’s queen white grape variety, Encruzado.
When well-managed in the vineyard and winery, this iconic Portuguese grape reveals delicate aromas, with notes of yellow-fleshed fruit, light citrus touches, a hint of resin, and great balance. It has little extraction, moderate alcohol content, no oak influence, and is very fresh, easy to drink, and above all, highly gastronomic.
The vineyards, aged between 30 and 50 years, are mainly located in the Serra de Terras de Senhorim sub-region, the most balanced area for white wine production, ensuring naturally elegant and fresh wines.
VINIFICATION: The grapes were hand-harvested in 15 kg boxes, carefully transported to the winery, and rigorously selected on a sorting table. They were then destemmed and, by gravity, transferred to a pneumatic press for a delicate pressing. Fermentation took place in temperature-controlled stainless steel tanks. After alcoholic fermentation, the wine was clarified and underwent malolactic fermentation in stainless steel tanks, where it aged for six months before bottling. A total of 4,064 bottles of 0.75 L were produced.
Ideal for lightly spiced dishes, seafood, roasted fish, white meats, and pasta. Suitable for vegans and vegetarians: dishes with root vegetables (turnip, sweet potato, beetroot) and legumes (chickpeas, beans, peas), as well as cheese-based dishes.
