The Definidos range was created with the goal of showcasing the enormous potential of the Dão region. These are delicate, precise, and authentic wines, designed for demanding consumers who appreciate originality and character. With great bottle aging potential, they stand out for their minerality and freshness in the white, and fresh fruit, forest aromas, and spices in the red.
The Definidos are partly the “younger siblings” of the Vinhos Imperfeitos.
The grapes used to make this wine come from different sub-regions of Dão, where the age of the vines ranges from 60 to over 100 years. Many of these grapes come from monovarietal vines, but also from vines with a wide mixture of typical regional grape varieties, such as Encruzado, Malvasia Fina, Uva cão, Rabo de Ovelha, Branda, Barcelo, Douradinha, among others. Since white grapes are more sensitive to diseases and because most of the aromas and their precursors are contained in the skin, it was of utmost importance to ensure a perfect selection of the grapes in the vineyard, ensuring the final quality of the wines.
Vinification: The grapes, coming from different sub-regions of Dão, were carefully selected in the vineyard and again at the winery. The must was gently extracted through pneumatic pressing and clarified naturally at low temperature. Fermentation took place in French oak barrels and partly in old cement tanks from 1962, where malolactic fermentation also took place. After numerous tastings and selections, the Definido Branco was born.
Aging: A small portion in French oak barrels and the rest in cement tanks.
Food Pairing: Roasted fish, shellfish, seafood rice, white meats, sushi. Vegetarian options: dishes with tubers (turnip, sweet potato, beetroot), Caesar salad, cheese dishes. Suitable for vegans and vegetarians.
