Aroma marked by notes of citrus fruits involved in a pleasant volcanic profile very mineral. The mouth is elegant and refreshing showing all the influence of proximity to the sea.
The largest and oldest wine producer in the Azores continues to respect and preserve the way our ancestors made wine. Techniques, arts and centuries-old traditions that are still the way to make wine from stone.
At the Cooperativa, the grapes picked by hand from the rocky vineyards allow us to preserve the authentic culture that used simple, fragile basalt stone walls to protect the vines, which would stubbornly survive, from the adverse weather conditions that are felt in this island Portugal.
Vinification: Fermentation in stainless steel vats (80%) and used barrels (20%).
Ageing: 6 months on the fine lees.
