Viticulture:
Very old vines from Cima Corgo, planted on traditional terraces with north and south exposure at different altitudes.
Winemaking:
After a rigorous grape selection and destemming, a pre-fermentative skin maceration was carried out, followed by a gentle pressing of the grapes. The must then underwent a settling period before fermenting in new French oak barrels.
Aging:
At the end of alcoholic fermentation, the wine was aged for 12 months in the same barrels, with regular bâtonnage.
Consumption:
Pairs beautifully with fatty fish, cod in its various preparations, stews, and a variety of oriental cuisine. As a natural product, the wine may develop sediment over time.
