Vale da Mata
Vale da Mata is the name of a small vineyard located in the foothills of the Serra de Aire, in Cortes, where Grandpa Manuel claims to have made the best wine of his long life as a farmer. He was the one who named this wine, which his granddaughter had the pleasure of helping to conceive. Vale da Mata thus revives a family tradition that marks the return of good wines to a peculiar land. This project is a blessing, almost a dream. We want the wine to be a dream too.
Situated in the northern area of the Lisbon wine region, the gentle hills and clay-limestone soils provide the ideal water regime for vine development. The climate, distinctly Mediterranean, is heavily influenced by the Atlantic, with cool nights and moderate temperatures promoting the long and proper ripening of the grapes.
In the viticulture of Vale da Mata, all operations, from winter pruning to harvesting, are carried out manually. In the wines, we use only wild yeasts. With minimal intervention and always respecting the principles of sustainability, the winemaking aims to reflect the terroir in every bottle produced. Despite careful selection in the vineyards, all bunches are once again inspected at the entrance of the winery, where the hand and care of man are fundamental to the creation of exceptional wines.
Vinification: Manual harvesting took place in 12 kg boxes on September 19, 2022. In the winery, the grapes were subjected to selection on a vibrating table. Fermentation occurred in 500 L French oak barrels at a temperature of 16.5 °C, followed by a six-month aging in the same barrels.
