Titan of Douro
Paredes da Beira was conquered from the Moors by D. Tedon and D. Rauzendo, Christian knights, family descendants of the King of León. The Christians knew that it was customary on the morning of Saint John for the Moors to bathe in the river. They seized this opportunity to attack the main castle, which was without reinforcements. D. Rauzendo came with his warriors, and the capture of the castle was easy (…) then he rushed to the aid of his brother, who was on the verge of losing the battle near the Távora River. The fierceness and valor of the two brothers and the other Christians against the Moors were such that they killed over a thousand, and even the waters of the river turned red. Born in parcels of century-old vineyards, planted at an altitude between 750 m and 850 m, with a transitional shale-granitic soil, poor and rugged, demonstrating surprising acidity.
Vinification: Fresh grapes at their ideal ripeness, handpicked into 20 kg crates, are transported to the winery where they undergo a careful manual selection, destemming, and gentle crushing, followed by skin maceration in stainless steel tanks for 48 hours. Without decanting, the must is transferred to French oak barrels, where it ferments with indigenous yeasts and undergoes aging with stirring of fine lees for 16 months.
To be enjoyed with intensely flavored and fresh dishes such as seafood and fatty fish, hard-cured cheeses, ham, and fine charcuterie.
