Tiago Cabaço
Tiago Cabaço is one of the most solid and prominent names of the new generation of Alentejo winemakers. Born and raised in Estremoz, in the heart of the Alentejo wine region, he got used, from a very young age, to living and working in the fields, in his parents’ vineyards, learning from the elders the small and great secrets of the vineyard, the quirks and tricks, the names of the grape varieties, and which soils and climates are best for each variety, becoming accustomed to treating the vines as close companions.
The Tiago Cabaço Vinhas Velhas white wine is made from the best grapes of the traditional Alentejo varieties, sourced from the oldest vineyards of the producer, planted in the Estremoz region.
The summer was hot, but Estremoz maintained the wide temperature variations that are so characteristic and essential for the vines to ripen slowly, allowing us to obtain grapes with an exemplary balance between alcohol and acidity. When we add details such as the proximity of the winery to the vineyards, gentle pressings, low fermentation temperatures, and aging in French oak barrels, it becomes easy to understand why we were able to reissue this edition of Tiago Cabaço Vinhas Velhas.
Vinification: Stainless steel vats with temperature control.
