Yellow, golden, bright. Aroma marked by a very rich aromatic complexity: dried flowers, beeswax, note of dried apricot, spicy and earthy. On the palate, it is broad and tense, with good volume and structure. Rich, firm, and growing acidity. Long and saline finish.
Driven by the desire to go further, we introduced techniques from other regions at No Rules Wines, deciding to vinify in amphorae. With these wines, we want to showcase the fusion of granite and clay!
This wine fermented with total skin contact for about 2 months in a clay amphora. Afterwards, it continued aging in clay, without skins, for another 4 months. It was briefly refined in 500L French oak barrels for about 3 months, from which it was directly bottled.
