SOU
This is a joint project between the producer Quinta de Santiago and the winemaker and producer Nuno Mira do Ó. It arises from a sincere friendship and is inspired by “Rock,” a common passion beyond the vines and wines!
With a minimalist approach, “SOU” is a rebellious and authentic wine, a raw and pure expression of the Monção and Melgaço “terroir.”
It is a highly gastronomic wine that, due to its freshness and texture, proves capable of accompanying a wide variety of dishes, from a simple tomato salad to grilled fish, natural oysters, steam-opened shellfish, sautéed shrimp, a succulent o-toro tuna, to fried quail, pickled partridge, a very spicy lamb curry, or Iberian pork cheeks.
Vinification: Manual harvesting, gentle pressing, natural decantation. Fermentation with indigenous yeasts. 40% of the must fermented in used 400-liter barrels and also underwent spontaneous malolactic fermentation. Slow fermentation of 60% of the must in tanks. Aging for 10 months on fine lees and bottle aging since August 2021.
The climatic year is characterized by alternating very high and low temperatures both in winter and spring. Summer, in general, was cool, although with some very hot days. The high thermal amplitudes of the region allowed for the retention of the natural acidity of these grapes and very balanced ripening. These grapes were manually selected on August 30, before the intense rains of September.
