Soalheiro
The Soalheiro Terramatter is a completely different wine from the other wines in the Soalheiro family. It is, on one hand, a return to the origins and, on the other hand, a projection into the future. Produced with minimal intervention in viticulture and vinification, Terramatter is the genuine expression of our territory. With its intense color, expressive aroma, and complex palate, this wine reveals a strong personality and a very distinct profile, for which early harvesting and partial malolactic fermentation in chestnut barrels contribute significantly.
Vinification: After manual harvesting, Alvarinho grapes undergo three distinct production processes. A portion ferments in stainless steel tanks. Another undergoes alcoholic fermentation and malolactic fermentation in traditional chestnut barrels typical of the Minho region. The third portion ferments in concrete eggs, followed by natural batonnage. The final blend is made with wines from each of these three parts, giving rise to Soalheiro Terramatter. It is then bottled without filtration.
We recommend gently shaking the bottle before serving the wine to homogenize the fine lees and thus obtain a completely different tasting experience!
The evolution on fine lees and its pronounced acidity make Terramatter a bold wine that demands to be accompanied by food. We suggest enjoying this wine with fatty fish, boiled seafood, smoked meat, lamb, turkey, or roasted vegetables. It is a wine that pairs very well with dishes that include cream or mushroom sauce. Its flavor and texture harmonize beautifully with Asian cuisine.
