Soalheiro
Cota 27 is an Alvarinho that originates from the lower slopes of the Monção and Melgaço valley, grown in small vineyard plots near the Minho River, where the soils are richer in clay. The interest in the characteristic minerality of mountain Alvarinho led us to explore its opposite near the river, a profile we developed in the Innovation Cellar. This is how this Vinho Verde DOC was born.
TERROIR
Monção and Melgaço, the northernmost wine region of Portugal, is protected by surrounding mountains that create ideal conditions, balancing rainfall, temperature, and sunlight for optimal Alvarinho ripening. The goal of reflecting the territory’s diversity and fully exploring the versatility of Alvarinho in its homeland leads to a continuous search for distinct profiles. Cota 27 was born from curiosity about the ripening control of vines near the Minho River, where clay-rich soils influence the grape profile. The distinctive taste of the grapes drove us to understand this difference and express it in a wine.
VINIFICATION
The grapes are hand-harvested. After pressing and before fermentation, the must is clarified at low temperatures. Fermentation starts in a French oak foudre and finishes in used 225-liter French oak barrels and a stainless steel egg. In the egg, natural bâtonnage occurs, while in the barrels, bâtonnage is carried out for 9 months on fine lees. The wine is then aged in the bottle for 6 months.
FOOD PAIRING
This is a highly gastronomic wine, ideal to accompany a meal. It pairs perfectly with grilled langoustines, seafood rice, fish rice, oven-roasted fish, and even Asian cuisine dishes.
