Ribeiro Santo
Region: The Dão Demarcated Region is one of the oldest wine regions in Portugal, dating back to 1908. Located in the center of Portugal, this mountainous region, with altitudes ranging from 400m to 700m, is anchored by the Serra da Estrela, the highest mountain in mainland Portugal. The region’s name comes from the Dão River, which runs through it. The wines are strongly marked by the granite soil and the presence of vines planted in forests of pine and eucalyptus trees.
Vineyards: The vineyard follows traditional planting and is situated in poor granite soil, with large rocky outcrops, from which the Serra da Estrela is visible. The vineyard operates under integrated production standards, reflecting a strong environmental concern. The combination of cultural practices and the careful use of organic products results in balanced and sustainable production.
Winemaking: The grapes come solely from Quinta do Ribeiro Santo. After total destemming, the grapes are pressed and the must is selected. It undergoes cooling and decanting at low temperatures. Fermentation takes place in stainless steel tanks, with the temperature controlled around 14ºC for 20 days.
