Quinta Fonte da Pipa
Fresh grapes at their optimal ripeness, handpicked in 20 kg crates, are transported to the winery where they undergo careful manual selection, destemming, and gentle crushing. They are pressed in a pneumatic press and the resulting must, in stainless steel tanks, settles at 8°C for 48 hours. Alcoholic fermentation begins at controlled temperature in stainless steel, then continues in French oak barrels, where it proceeds and ages for another 18 months, with regular stirring of the lees.
