The grapes for Quinta dos Castelares Reserva Branco come from Quinta dos Castelares, located in Freixo de Espada à Cinta, in the Upper Douro, at an altitude between 500-600 meters. The soils are schistous with a high presence of stones.
The vineyard is implemented in terraces with a double cordon and high vines. Dominant orientation: North-Northeast. Manual harvest. Gentle pressing of whole clusters. Fermentation with temperature control at 16°C. Partial fermentation in new barrels of fine-grain French oak followed by aging in French oak barrels (2/3) and American oak barrels (1/3) with stirring of the fine lees.
Try it with oven-roasted fish, cod, white meats, and soft cheese.
