Vine Age: Over 25 years
Winemaking: 20% Verdelho, 20% Cerceal, 20% Folgasão, 15% Viosinho, 15% Gouveio, 10% Rabigato. The grapes are received in small 20 kg boxes, followed by full de-stemming and gentle crushing. The grapes are then pressed to separate the juice from the skins. Cold decantation occurs for 24 to 48 hours. 50% of the fermentation is done in temperature-controlled stainless steel tanks, while 50% takes place in French oak barrels on fine lees for 9 to 10 months.
