Quinta do Estanho
The fresh grapes harvested by hand are quickly transported to the winery where they are destemmed, crushed and placed in a vat where they undergo a slight pellicular maceration and are then lightly pressed. Two thirds of the fermentation took place in stainless steel at a controlled temperature of 12-14°C for two weeks and the last third in French oak barrels. After fermentation the wine
matured on its lees for 9 months with weekly battônage, in order to maintain its freshness and to gain complexity.
