Visual Aspect: Clear color with greenish reflections.
Olfactory Aspect: Clean, complex, and youthful aroma, with floral nuances, highlighting orange blossom, bergamot orange, and grapefruit, wrapped in a mineral and fresh character.
Gustatory Aspect: Elegant and fresh wine, where the intensity of flavor and the vibrant acidity, typical of the Dão region, provide perfect balance. A persistent ensemble with a long finish.

Quinta de São Simão da Aguieira

Soil: Granitic/Sandy.

Cultivation Method: Single upward cordon.

Average Vine Age: Over 30 years.

Average Yield: 40 hl/ha.

Vinification and Aging: Upon arrival at the winery, the grapes are cooled and sent to the press, undergoing a very gentle pressing, with only the free-run juice being used. The must is then clarified to separate the solid parts. Fermentation starts at a controlled temperature between 16°C and 17°C for about 10 days. After alcoholic fermentation, the wine ages on fine lees for 3 months. Bottling is carried out in an inert atmosphere with total bottle deoxygenation.

Perfect to accompany fish dishes, cold cuts or white meats, pasta dishes, and risotto.
