Pasmados
Winemaker Domingos Soares Franco’s Notes:
“In the 1980s, I discovered around 200 bottles of Pasmados White from the 1963 and 1964 vintages in a José Maria da Fonseca cellar. After tasting these vintages, I noticed the excellent quality and evolution of this wine in the bottle: evolved color, toasted and ripe aromas (walnuts, hazelnuts, and pistachios), but no signs of oxidation. This discovery inspired me to create a white wine with a similar aging potential. Over time, and after several harvests, I arrived at the current blend of Viognier (from clay-limestone soils), Viosinho, and Arinto (from sandy soils).”
Thus, Pasmados White is positioned as the top-tier white wine from José Maria da Fonseca, released only after a minimum of two years during which it ferments, ages, and rests in the cellars.
Vinification: Viognier (59%), Viosinho (22%), and Arinto (19%). 50% fermented in second-year French oak barrels and 50% in stainless steel.
Aging: 3 months in second-year French oak barrels with bâtonnage, followed by resting in the cellars.
