Tiara comes from over 60-year-old vines, planted at an elevation of 600 metres, where the predominant variety is Códega do Larinho. A fine, light wine, with a lot of energy.
VINIFICATION
The 2021 harvest started on August 11th, with excellent indicators, high acidity musts, low alcohol, fairly hard skin, resulting in well balanced wines, both white and red.
In September, the climatic instability gave rise to a peak in the entry of grapes into the winery and the existence of different maturations depending on their geographical location.
After a selection of the grapes in the vineyard, they were transported in 25 kg boxes in refrigerated lorries. At the entrance of the winery, a second sorting took place. The grapes were gently pressed in a stainless steel vat where the must was decanted cold.
This was then transferred to a Foudre where it fermented spontaneously for about a year (alcoholic and malolactic fermentation) with room temperature control.
