The Docile (Miau) is made 100% with the Moscatel Galego variety, a variety with a very distinctive identity, characterized by its floral and citric aromas. It has been made light, fresh and jovial, based on the acidity and aromatic expression of the grape variety. Given its low alcohol content and some residual sugar, it has an excellent harmony, inspired by the white wines from Germany. Like the cat, it is docile, but with a unique personality and very strong.
Planted at an altitude of over 500 meters in the Alijó region, the Moscatel Galego grapes were harvested in mid-September and then transported in cold storage to the Quinta de Nápoles winery. Being healthy grapes with high acidity and low sugar content, they resulted in a must with great aging potential.
The alcoholic fermentation process was initiated in stainless steel tanks at a low temperature with the fine lees, then interrupted by cold, followed by a transfer to an isothermal tank to maintain a balanced level of sugar and acidity.
