Monte Cascas
The white wine Monte Cascas Malvasia is born in Colares, with an unquestionable Atlantic influence, cool and humid summers, morning mists, cold and salty winds, on sandy soils; the vines extend their cords horizontally in the sand; the cords and new shoots are lifted from the sand 6 to 8 weeks before the harvest by canes about 25 cm long, called “pontões.”
The harvest took place in September and was done manually.
Vinification and aging: The grapes go directly to the manual press; 10 hours of gentle pressing; controlled hyper oxygenation; 12 hours of cold settling; 100% barrel fermentation; 100% in used French oak barrels. Aging for 12 months in French oak barrels.
An excellent wine to enjoy on its own or paired with cheeses, oysters and mussels, or sushi.
