Grapes from Viña Tondonia are always used in the production of the highest quality wines, and naturally, during truly exceptional vintages.
The character of these wines is shaped by several factors: the climate, the soil, careful work in the vineyard, the winemaking process, and finally, the meticulous care during the long ageing period in oak barrels, followed by bottle ageing.
It is a long, almost mystical process — a path of continuous refinement until the wine reaches its full expression.
Winemaking and Ageing: Blend of Viura (90%) and Malvasía (10%). Aged for 6 years in oak barrels, with racking twice a year and fined with fresh egg whites. Further ageing in 75 cl bottles, unfiltered.

Firm-fleshed fish (ideally)
Grilled: Sea bass, sea bream, turbot, mackerel, tuna belly, monkfish, and hake neck cuts.
In sauce: Cod “à la pil-pil” (poached in olive oil), cod “a la Riojana” (with peppers and tomato), cod or hake cheeks, hake in parsley sauce, tuna with tomato or onions, monkfish in sauce Américaine, among others.
Rice dishes
Creamy or sticky rice cooked in seafood broth.
Fish stews
Marmitako (potato and tuna or shellfish stew with lobster), stews with potatoes and cod or monkfish.
Egg dishes
Various scrambled egg options: with oyster mushrooms, prawns, garlic shoots, wild mushrooms or foie gras. Also pairs well with Spanish omelette or simply fried eggs.
