Herdade das Servas
Viticulture: Vines planted in red soils derived from brown or crystalline limestone, with spots of schist, benefiting from a Mediterranean climate with high temperature variations and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were manually harvested and transported to the winery in crates.
Vinification: After destemming and crushing, the grapes are pressed in a pneumatic press with protection against oxidation. Static decantation for 48 hours and alcoholic fermentation in stainless steel tanks with temperature control.
Aging: Once alcoholic fermentation is complete, the wine ages “sur lie” in stainless steel tanks for three months.
Longevity: Between 5 and 15 years, if stored in a cool, dark place with the bottle laid down.
