The white wine Evidência Colheita is born in the Dão, a region recognized for producing whites characterized by a balance of acidity and unusual longevity. Surrounded by several mountains, including the Serra da Estrela, the highest in the country, the Dão has predominantly granitic soils, with some areas of schist. The temperate climate, of the Mediterranean-continental type, protected from maritime influence by the mountains, is marked by altitude (75% of the area is situated between 400 and 700 meters), providing excellent acidity freshness in its wines.
The two main rivers in the region are the Dão and the Mondego, which, along with the relief of its valleys, create a great diversity of microclimates.
The Evidência Colheita white is a blend wine composed of 40% Encruzado, 40% Malvasia Fina, and 20% Bical, three grape varieties that are emblematic of the Dão.
Vinification and aging: Fermented in stainless steel tanks.
This elegant white wine pairs perfectly with grilled fish dishes, such as sea bass or gilt-head bream, seasoned with fresh herbs and lemon. The balanced acidity and fresh flavors of the wine will enhance the flavors of the fish, while the floral and fruity notes will complement the lightness and freshness of the dish. It can also pair well with fruit salads and fresh cheeses, such as mozzarella.
