Vinification
Grapes from two small plots of 65 and 93 year old vines, with very low yields (about 1500 Kg/ha). Whole cluster pressing, cold decantation and temperature controlled fermentation between 17-19ºC. Fermentation and ageing of the wine in barriques for 14 months. 15% in new French oak barrels, 45% in stainless steel barrels and 40% in used French oak barrels.
Limited production of 1700 bottles.
