El Garbi
El Garbi is the Arab wind that blows through the vineyard and plays a vital role in ventilating the canopy. It brings warmth to the high-altitude sites, where the Garnacha Blanca grape ripens to perfection.
The grapes, previously destemmed, are very gently pressed, with the aim of extracting only the best juice, representing approximately 50% of the extraction for this wine. Fermentation and aging take place in superior quality 500-liter French oak barrels. Only three barrels are used, aged 2, 3, and 4 years respectively. The wine rests on its lees for 7 months before bottling.
