Lemon yellow. The initial expression is buttery, followed by hints of lime, passion fruit, and spice, all very restrained and elegant. The structure is fine and salty, the mid-palate creaminess is immaculate, the unfolding of textures feeds a deep and flavorful finish with plenty of substance. A remarkable wine that should be kept religiously... although not knowing it already is almost sinful.

Domínio do Açor

The Domínio do Açor Vinha Celta Bical enjoys the freshness and continental influence of Dão, while at the same time, its mesoclimate is drier and less marginal than in the Serra da Estrela. Bical grapes (or Borrado das Moscas) ripen slowly with a significant balance between sugars and acids, and a high load of aromatic precursors.

The soil is granitic, well-balanced between soil and stone, specifically between the silt typical of granitic soils, with alterites or rocks degraded by chemical and physical weathering processes, as well as quartz and the granite mother rock. Throughout the Domínio do Açor vineyard, a level 5 alterite predominates.

Vinification: Total destemming with grape crushing in a pneumatic press, natural and static settling, followed by fermentation with indigenous yeasts in barrels at a temperature of approximately 18-22ºC. Aging on fine lees in a reducing environment, without the addition of sulfites. Complete malolactic fermentation. Low addition of sulfites before bottling (82mg/l total sulfur dioxide). Natural decantation, the wine has not been clarified or filtered and may show sediment.

Aging: 11 months in barrels (barrels previously used for Chenin Blanc vinification in Saumur, 2014, French oak).

It pairs wonderfully with cod with cream, shrimp curry, lobster rice, gratinéed scallops, and Bahian-style moqueca.

It relies on great grape varieties appreciated worldwide, such as Touriga Nacional(originating from Dão, recognized as the great Portuguese red grape variety), Alfrocheiro, Jaen (Mencia in Spain), Encruzado (one of the best and most versatile white grape varieties in the country), as well as lesser-known varieties that can produce wines of immense elegance, tension, and freshness: Tinta Pinheira (Rufete), Alvarelhão, Bastardo (Trousseau in Jura), Bical, Cercial, Uva Cão, and Luzidio.

Domínio do Açor lets the voice of the land speak through its wines from its own vineyards, cultivated with care, wisdom, and respect for the environment and terroir. It instills confidence in quality, evoking the sub-region of Carregal do Sal in Terras de Senhorim and also the unique effect that the surrounding mountains have on the style of Dão wines. One of the mountain ranges that protects and influences the quality of Domínio do Açor wines is the Serra do Açor, clearly visible from the vineyards and beautiful to visit, with forests, waterfalls, and one of the most picturesque villages in Portugal, Piódão.
