It has a yellow tone with greenish reflections. On the nose, floral and vegetal notes can be found. In the mouth it is very lively and persistent with notes of white fruit, pear and peaches.
Pairing:
It can accompany white meat dishes, including with some spicier sauces. We also recommend, for those who appreciate it, to try it with oysters.

Fermentation: fermentation in stainless steel vats with controlled temperature. Aging: 15 to 18 months in contact with fine lees, in stainless steel vats and French oak barrels.

Domaine du Chardonnay

Etienne Boileau, Christian Simon and William Nahan combined their operations and skills on 30 June 1987 to create the G.A.E.C Domaine du Chardonnay. The Domaine du Chardonnay operates a vineyard of 34.5 hectares. Only the Domaine’s harvest is vinified and aged in our cellars. In the image of the Chablis vineyard, made up of tradition and modernity, the vinification is based on the ancestral respect of the products, the grape, the must and the wine, combined with a rigorous control and an in-depth mastery that the evolution of oenological knowledge offers us.

Thus the work of vinification will be guided by the respect of the terroirs, the vintages, the age of the vines and the sanitary quality of the grapes, in other words by adapting it to the “cuvée”.

Our Premier Cru appellations of Rive Droite and Rive Gauche show us how much the soil, the exposure and the wind influence the aromas and the behaviour of a wine.
