Apricot colour, with aromas and flavours of pear, orange, apricot, dried fruits and floral nuances. It is a dry, juicy wine with vibrant tannins and a long and pleasant finish. It should be served lightly chilled (10-12°C), alone or with food and friends.
This NatCool white wine is the result of a friendship full of adventures and challenges between Sara Matos and Ana Sofia Olivera and Rodrigo Martins, from Espera vineyards. That is why we called it Defio. The Fernão-Pires and Arinto grapes fermented for 17 days on skins.
After fermentation, pressing was done, and the blend was finished with the addition of a small amount of Alvarinho that had fermented in used French oak barrels for 7 months.
