Covela
Quinta de Covela practices organic agriculture on granite soils that form a natural amphitheatre facing south. A low-lying terraced landscape on the right bank of the Douro River, in the southern part of the Vinhos Verdes region (Minho). Cold winters and hot, dry summers – on the border between the continental climate of the Douro Valley and the maritime influence of the Douro Litoral.
Manual harvesting, organised by vineyard plot to ensure timely harvesting at the right time. Transport of the grapes in small crates to avoid crushing. Manual selection of clusters. Cold skin maceration. Gentle pressing.
Spontaneous fermentation in oak barrels from Austrian and French forests. Aged on its lees, with periodic batonnage. No stabilisation or filtration.
