Covela
Quinta de Covela practices organic agriculture on granite soils that form a natural amphitheatre facing south. A low-lying terraced landscape on the right bank of the Douro River, in the southern part of the Vinhos Verdes region (Minho).
Cold winters and hot, dry summers – on the border between the continental climate of the Douro Valley and the maritime influence of the Douro Litoral. Harvesting is organised by vineyard plot to ensure that the grapes are picked at the right time.
Hand-picked. Transported in small boxes to avoid crushing. Manual selection of clusters. Light skin maceration only in the Chardonnay grape variety.
Gentle pressing. Spontaneous fermentation in stainless steel tanks with temperature control. Blending in December. Aging on fine lees until mid-June
June of the year following the harvest.
Light filtration before bottling. In order to express all its characteristics, it is aged in the bottle for at least one year before being put on sale.
