For this wine, the most ancient Antão Vaz grape varieties are selected. The grapes are picked at night and transported by refrigerated truck. As soon as they arrive at the winery, the grapes are pressed and the must is fermented in new Hungarian oak barrels. After alcoholic fermentation, the wine is bottled and the bottles sealed. After ageing in barrels, the wine is bottled and immersed in the Alqueva lake, where it matures at a depth of 30 metres in unique and excellent conditions for 8 months.

Ervideira
The estates of Monte da Ribeira and Herdadinha both belong to the Leal da Costa family, direct descendants of the Count of Ervideira, a successful farmer in the late 19th and early 20th centuries. With 160 hectares divided between two estates, one in Vidigueira (110 ha) and the other in Reguengos de Monsaraz (50 ha), Ervideira´s company is run by Maria Isabel Leal da Costa, the family’s matriarch, together with the support of her six children, including Duarte Leal da Costa, the executive director. Nelson Rolo is the head winemaker.
