Bright straw yellow. Intense and richly complex aroma, with notes of stone fruit and white pulp, well integrated with herbal notes of bay leaf and thyme. Fragrant, intense, and subtly marked by a gentle toast. On the palate, it is broad, textured, and well-balanced by medium but vertical acidity. Long, jovial, and perfumed finish.

We have coded, in partnership with the prestigious Portuguese brand “Infusões com História” (Infusions with History) a sequence of flavors that we reveal in this distinctive wine. Signed by Tiago Macena, the only Portuguese winemaker about to become a Master of Wine, Código Infusão Subtil (Subtle Infusion) combines the wine with an innovative infusion, reflecting the winemaker’s irreverence and the spirit of the “No Rules Wines” cellar.

With the desire to innovate, we chose the Subtle Infusion, a blend of bay leaf, walnut leaf, and bella-luz, to create this pioneering wine. The Infusões com História team prepared the infusion to fill a French oak barrel. Transferred cold into the barrel, the infusion remained in contact with the wood for two weeks, aromatizing it.

“The result is a curious surprise: a wine where lightness and delicacy transpire between exoticism. At first, it feels strange, but then it becomes familiar. From the floral, slightly woody, and mentholated aromas coming from the bay and walnut leaves that had previously impregnated the wood, to the exotic freshness on the palate, it will be a memorable companion on summer nights. A wine that is a phenomenon of nature and could be named as such. The characteristics of the Subtle Infusion, when tasted simultaneously, reaffirm the aromas we find in the wine, with a gentle, fresh, and camphorated scent. The teamwork between Macena and Miguel Moreira (mentor of Infusões com História, a brand that aims to select the best plants and aromatic herbs from the national territory in original blends, with organic certification) aims to “cross the sensory world of alcohol and non-alcohol.” – Fátima Iken, Wine Magazine, May 2024

Vinification: The grapes were directly pressed, and the must was statically decanted for about 24 hours. Fermentation began in a stainless steel tank. Midway through the fermentation process, the must was transferred to the barrel, now emptied of the infusion. The must’s fermentation continued in the barrel until completion, gaining aromas from the infusion and creating its own. Racked off the gross lees in November 2023, the wine returned to the barrel to continue aging until the end of July 2024 (11 months). It was lightly filtered before bottling.
