Château Saint-Aubin

Geographic Location and Terroir:
Appellation: Criots-Bâtard-Montrachet Grand Cru
Sub-region: Côte de Beaune

The 1.57 ha Criots-Bâtard-Montrachet vineyard is the only Grand Cru entirely located in the municipality of Chassagne-Montrachet. At an altitude of 240 meters, it is situated slightly lower than its neighbors Chevalier-Montrachet and Montrachet. The soils of this very well-exposed plot consist of rock blocks and are relatively well-drained. “Criots” comes from “chalk,” and the subsoil is made up of Bathonian limestone, sometimes mixed with clay. The legend tells that during the Crusades, there was a castle on the Montrachet hill. The lord of the castle sent his only son to the Holy Land to fight. The man had a young mistress whom he met at the “Clos de la Pucelle.” She had a child. Thus, the son who went to the Crusades was called Chevalier-Montrachet, and the illegitimate child, Bâtard-Montrachet. When the death of Chevalier-Montrachet was announced in the Holy Land, the lord took his illegitimate son as his successor, who was acclaimed: “Welcome to the bastard Montrachet!” The legend says that the lord, disturbed by the cries of his young son, exclaimed in Burgundian dialect, “a crio (he cries) l’Bâtard.” After the destruction of the castle, the vineyards began to bear the names of these characters in memory of this story.

Vinification:
Immediately after harvest, the grapes are pressed as whole bunches in a vertical pneumatic press, followed by static settling of the musts for 24 hours at 12°C. The musts are then directly transferred into barrels, with both alcoholic and malolactic fermentations taking place in a single 240-liter barrel. Afterward, the wine undergoes aging on lees for a total of 24 months, with no racking.

Aging:
16 months in French oak barrels.

The barrel is specially made each year for this plot. It is used for the first time to vinify a first cru from the estate, and then it is used for the vinification of Criots-Bâtard-Montrachet.

Delicious with lobster and saffron sauce.

The Clos du Château, classified as Saint-Aubin Premier Cru, and the adjacent parcels of the estate, form a collection of excellent terroirs, producing exceptional wines: Criots-Bâtard-Montrachet Grand Cru, Puligny-Montrachet 1er Cru, Meursault 1er Cru, Chassagne-Montrachet 1er Cru, and Saint-Aubin 1er Cru.
