Cerejeiras
Grapes harvested by hand, destemmed, slightly crushed, rest in cold skin maceration (8-10o) for 6-8 hours to extract the aromatic compounds in the grape skin. After pressing and defecation by cold, the grapes are inoculated with selected yeasts and undergo alcoholic fermentation with temperature control around 16º for 15-20 days. Bottling: After 5 months of ageing in stainless steel vats. Limited to existing stock.
