Caves Bonifácio

The production of Caves Bonifácio wines begins with a meticulous selection of the grapes. Once harvested, the grapes are unloaded into vats, which mark the starting point of two parallel production lines – one for white grapes and the other for red grapes.

For white grapes, the wine is made using the “Bica Aberta” (direct pressing) method. The grapes are directed to a pneumatic press where the must is separated, and the solids are pressed. After this process, the must undergoes a cold thermal shock, followed by fermentation at controlled temperatures.

Founded in January 1964, António Francisco Bonifácio e Filhos, Lda. continues the work of its founder, António Francisco Bonifácio, who, from a young age, dedicated himself to cultivating vineyards and producing high-quality wines. For more than 40 years, he managed the business with a clear vision: to achieve the highest quality in his products while meeting the demands of an ever-evolving market.

The following generations have preserved this commitment, maintaining a balance between tradition and innovation. Values such as dedication, respect for the terroir, and a constant pursuit of excellence remain at the core of the company’s philosophy.

Located in the Lisbon wine region, north of the Tagus River, this is one of Portugal’s most prolific areas, comprising ten sub-regions, including Torres Vedras, the municipality with the largest wine production in the country. With fertile soils, a mild climate, and an average annual rainfall of 700 mm, the natural conditions favor the production of unique wines.

In our vineyards, grape varieties such as Castelão (or Periquita), Tinta Miúda, and Alicante Bouschet stand out. Cultivated in clay-limestone soils with low fertility, the grapes mature under conditions that enhance the concentration of tannins, essential for structured wines with great aging potential.

Every step of the cultivation process is carried out with extreme care. Winter and summer pruning ensure the quality of the grapes, and before harvesting, some leaves are removed to maximize the quality of the remaining fruit. Although this reduces vineyard yields, this approach ensures grapes with the ideal acidity and tannic structure for producing exceptional wines.
