Cassa

Grapes harvested by hand in small 15 kg boxes. Cold fermentation technology in a reductive environment, with controlled temperature at around 16 ºC. Very gentle crushing and pressing in an inert atmosphere to preserve all the aromatic potential of the grapes. Part of the wine fermented in used French oak and remains there after a brief storage on fine lees with regular stirring “battonage” for the making of the final blend with the wine in stainless steel tanks. Fermentation and ageing in French and American oak with “battonage” until filling in April.

 Out of respect for nature, due to the way we cultivate their vineyards and wines reflect his experiences, which smell and taste of land, of schist, damp granite, rock rose, wild flowers and fruit. 
It is in the winery that he makes wines with the character of our ‘terroir’, expressed through native grape varieties, which instil with a style of their own and an international profile.
