Casal das Aires
The Casal das Aires project represents the return to my origins, the Tagus region, centered on my interpretations of different grape varieties, in the different terroirs of the region. Produced on the Charneca Ribatejana terroir in loamy clay soil, vinified in used 225L French oak barrels and aged for 9 months
Winemaker Joana Pinhão
winemaking
The grapes are harvested by hand, only in the morning to preserve maximum night freshness and maintain the best quality. Upon arrival at the cellar, they undergo rigorous screening, gentle pressing followed by total fermentation in 225L barrels. After fermentation, we opted for aging for 9 months in contact with the fine lees, but without stirring. Before bottling, the wine is aged for 3 months in stainless steel vats, followed by 4 months in bottle.
