CARM

We selected grapes from vineyards in the Douro Superior region, from the Códega do Larinho, Rabigato, and Viosinho varieties, which were then vinified at our Quinta das Marvalhas winery in Almendra, in the heart of the Douro Superior.

Vinification: At our winery, equipped with the most modern technology and total temperature control, we removed clusters that were not in perfect condition. The grapes were vinified with total de-stemming, followed by gentle crushing and skin maceration for about 12 hours. After this period, under inert atmosphere, the pressing was carried out using a pneumatic press. This was followed by a clarification period of the must, lasting 24 to 48 hours, depending on the grape variety and the state of maturation. The alcoholic fermentation took place at a controlled temperature between 12 and 14ºC. The wines aged in stainless steel on fine lees until bottling.

In the Douro Superior (Upper Douro), wherethe organic cultures of vines, olive oil and almonds coexist with an endangered fauna, ourfamily affirmed our connection to our landthrough the founding of CARM – Casa Agrícola Roboredo Madeira. These lands, where our Estates are situated, continue to give refugeto the golden eagle, the fishing eagle, the griffin and the wild partridge, so typical of the slopes of the Douro Superior and are home to a flora of rock rose, juniper, fennel, rosemary and sour flowers, among other species. CARM Estate farms or quintas comprise over 125 hectares of vineyards, 220 hectares of olive groves and 60 hectares of almond plantations.

Our olive oils are produced and bottled inour sophisticated ecological mills, wheretechnology meets the tradition provided byancient stone mills. All waste is recycled and reintroduced into the land, thus improving thestructure and fertility of the soils of our olive groves.Each parcel of grapes from our vineyards is vinified, aged and bottled in our own cellars according to the latest technology, while traditional vats are used for fermentation.We also produce a line of “gourmet” specialties and vinegar, organic honey and premium almonds.All products are available directly fromthe CARM premises, in Almendra.
