Caminhos Cruzados
A blend of three white grape varieties from Dão, created to bring together the distinct characteristics of each variety to achieve balance and harmony, as well as the gastronomic suitability that defines the finest white wines of this region. In short: elegant, fresh, and vibrant! Part of the Encruzado was aged in French oak barrels to enhance its complexity, volume, and structure.
Vineyards: Located in the Terras de Senhorim sub-region, between the Dão and Mondego rivers, planted between 400 and 500 meters in altitude on granite soils, with vines aged between 8 and 50 years.
Vinification: Hand-picked harvest in 15 kg crates. Separate vinification for Encruzado. Manual selection on sorting table. After destemming and crushing, the grapes were sent to a pneumatic press for separation of the must from the skins, and the must was clarified through static decanting at a low temperature for 48 hours. Fermented in stainless steel vats at controlled temperatures, with part of the Encruzado aged for about 6 months in French oak barrels, both new and used.
Aging: 6 months in French oak barrels, new and used.
Pairing: Grilled fish, seafood, sushi, fish cataplana.
