Prepared from Encruzado. This wine has a citrine colour defined with greenish tones. Intense aroma in citric notes, lime, citron, light hazel and tropical nuances. In the mouth it is fruity, elegant, harmonious and notorious final freshness that gives it good gastronomic aptitude. Oven-roasted fish, white meat roasted or grilled, red meat grilled, various charcuterie and soft cheese
The grapes for Cabriz White Wine Reserva were harvested by hand, followed by total destemming, gentle crushing and pressing without contact with the skins. The musts were clarified at low temperatures for 24 hours. The different varieties were vinified separately in stainless steel vats at a controlled temperature of about 16°C for a period of approximately 15 days. After 4 months of ageing in stainless steel tanks, the wine was transferred to new oak barrels where it underwent a batonnage process for 2 months and then another 3 months in the bottle.
