Cabo da Roca
Vineyard located 24 km from the Atlantic coast at 15m altitude with 30-year-old vines. 5.5 tons yield, 3,800 plants per hectare. Trancão River Valley with north-south oriented slopes. Training system: Single Cordon.
Climate and soil – Microclimate influenced by the Tejo River with cold winters and temperate summers with cold nights. Limestone soils (“caeiras”).
Harvest – 3rd week of September, 100% manual harvest.
Vinification – Grapes go directly to the press with destemming without crushing, 48h cold settling; 100% fermentation in tanks.
Aging – 6 months in used French oak barrels.
Pairing suggestions – Fresh goat cheese, oysters, grilled fish, seafood risotto with grouper.
