The Binivista 15º Tomir white wine is named after the Puig Tomir mountain, a part of the Serra de Tramuntana that is so emblematic of the island. It’s one of the highest mountains on the island at 1,104 meters, but it’s a virtually unknown gem to many. The Sauvignon Blanc vineyards face this mountain at a 15° angle from the winery.
Vinification: On August 11th, 5,599 kilos of fresh and aromatic Sauvignon Blanc were harvested and processed the following morning after an overnight chilling. The grapes were then pressed and set to ferment. About a week later, on the 16th, 7,204 kilos of lush and tropical Viognier were harvested. After processing, a total of 6,380 liters was also set to ferment. After fermentation and racking, some, but not all, of the two wines were blended in a 42% Sauvignon Blanc and 58% Viognier proportion, respectively. The aging was done in stainless steel tanks for 7 months. The wine was bottled in March 2022 and released in May 2022.
Serve Tomir very cold to keep its body and power in check. It pairs perfectly with an Asian-style salad with large prawns. Think crisp green leaves, avocado, sugar snap peas, cilantro, mango, and a lime, ginger, sesame, and chili dressing.
