Baías e Enseadas

Start of fermentation in stainless steel vats with controlled temperature between 16º and 18º, finishing the fermentation in used French oak barrels. Total malo-lactic fermentation. 6 months in barrels with weekly batonnage.

The Baías and Enseadas wines were the concretion of a very old dream, that started to be realized in 2012, with the surriba of the land in the future vineyard of Ribeirinha, in Codiceira, Sintra, followed by the plantation itself, in the following year. It is essentially from these two vines that the grapes come out that give rise to the Baías and Enseadas wines. The lands where these vineyards are located are essentially clay-limestone, with predominance of clay in Vinha da Ribeirinha and limestone in Vinha do Campo, what results in more voluminous wines in the first case and more elegant in the second. The junction of the grapes of these two vineyards allows to obtain more complex wines.
