Lively and fresh. Full of character and wine personality, always dominated by mineral notes typical of limestone soils, together with aromas of needles and pine resin, dried fruits and some straw. The palate is always vibrant, nervous and with great structure and length.
The winemaking methods used are paradoxical, showing that high quality grapes do not require great technology, vertical press and settling in “lagareta” open cement give resistance to oxidation but also for years, a wine that usually has a well marked acidity. Fermentation is done in old wooden barrels, where it remains for about a year until bottling.
