The white wine Pouilly-Fuissé is a great classic; an indispensable Burgundy wine that reflects its terroir, and in which the village and premier cru village designations of this range are revealed. Their authenticity and character are renewed harvest after harvest thanks to the respect for the ancestral Burgundian savoir-faire.
Soil: Clay-limestone with loose pebbles.
Appellation: Located between the Roche de Vergisson and the Roche de Solutré, Pouilly-Fuissé is a village appellation in the Mâconnais vineyard, producing exclusively white wines made from the Chardonnay grape variety.
Winemaking: Grapes are hand-picked and sorted, then pressed and placed in demi-muids for vinification. Aging is done in demi-muids of 2 wines without new barrels. Constant batonnage takes place to put the lees back into suspension.
A wine that pairs wonderfully with fresh salmon or grilled lobster, both with aromatic herbs, pike or perch cooked on one side with crispy skin and drizzled with crayfish broth to enhance the aromatic complexity of this wine. Or with frog legs and parsley, white meats and goat cheese.
