Vineyard:
Location: 119 km from the Atlantic coast.
Altitude: 550 m.
Age of Vines: 8 years.
Production: 4 tons/hectare.
Orientation: Northwest-Southeast.
Training System: Unilateral cordon.
Climate and Soil: High-altitude plain, with very high temperatures in the summer, winds, and snow in the winter.
Winemaking: 100% manual harvest, carried out in the last week of August. The grapes were sent directly to the press, with destemming but no crushing. After 24 hours of cold settling, 100% of fermentation took place in stainless steel tanks under controlled temperature.
Food Pairing Suggestions: Pairs well with creamy sauces, lobster with butter, roasted turkey, and salmon.
