Green notes on aroma, cabbage stalk and green apple, resulting in a tone of freshness and mineral. Elegant in the mouth, very thin and with a pronounced acidity.
Transport in 20 Kg boxes, destemming with crushing using only the tear wort, cold defecation in 48h, inoculation, fermentation and stage in stainless steel vats. Aged in French oak barrels where it remains for 4 months.
