Soalheiro
The Granit is made with Alvarinho grapes from a specific selection of small vineyards planted in granitic soil, currently about 400 meters above sea level in the sub-region of Monção and Melgaço. The higher the vineyards, the more the fruity side of Alvarinho gives way to notes of acidity and minerality. Parcels are chosen due to the mineral content and lower soil fertility, causing the roots of the Alvarinho vines to delve deeper into the mountain slope to find nutrients.
The name of this wine – “Granit” – is very appropriate because it is highly mineral, with discreet fruit notes and vibrant acidity, revealing this different and unusual dimension of a mountain Alvarinho. Its acidity and elegance make the mouth water and make this Soalheiro Granit a very gastronomic wine.
Vinification: Grapes are hand harvested. After pressing, before fermentation, the must is clarified. Fermentation takes place in stainless steel tanks at a higher temperature than usual for white wines (22°C), ensuring that the fruity nature of Alvarinho does not mask the delicate minerality we seek in this wine. Stirring the lees and aging on fine lees enhance the structure of the wine before it is bottled.
Due to its mineral character and lively acidity, Soalheiro Granit pairs particularly well with Mediterranean cuisine: seafood, grilled fish, roasted fatty fish. It also pairs well with white meats, smoked meats, aged cheeses, and delicate dishes from Asian cuisine such as sushi or dim sum.
